It’s Foodie Friday! (Leftover Time)

Hi and happy Foodie Friday to all of you! Right now we are all in a time of social distancing so that means fewer trips to the grocery store. So what better to do then get creative with leftovers? These will just be some ideas for possible leftovers you might have or maybe even consider making so you have leftovers.

 

A big batch of homemade mac and cheese makes for great baked mac and cheese for lunch the next day. Simply reheat the batch on the stove, adding some milk for smoothing. When it’s heated, place into a lasagna pan and top with turkey bacon, turkey sausage, any color pepper chopped, onion, turkey pepperoni… get creative!

 

Extra mashed potatoes? Make shepherds pie with ground beef or turkey, any veggie you prefer and maybe some cheese on top and bake in the oven for about 40 minutes at 350 degrees F. and there’s another meal!

 

Consider making a breakfast casserole for dinner with leftover fried potatoes, and some sausage and eggs. Perfect and filling. Place the potatoes and sliced up  sausage in a large fry pan together and heat through. Scramble up some eggs (enough to feed your family) and pour those into the fry pan along with the sausage and potatoes. Using a rubber spatula, stir continuously until eggs are firm. Top with cheese and vwaa laa! Comfort food!

 

Did that meatloaf you made have quite a few leftover pieces or patties? Toast up some bread, grab some lettuce, cheese, and maybe some tomato and make some meatloaf sandwiches. Simply heat up the patties or slices and your good to go.

 

I’d also like to take this opportunity and encourage you to think about planting a garden this year. I’ve been wanting to and just haven’t gotten around to it. But this year, I’m getting it done. There is nothing like picking from your own vegetable garden for meals. Then being able to pull a jar or freezer bag out and have veggies for dinner or lunch all winter long.
