Happy Foodie Friday all! The weekend is upon us. I love me some home made pancakes on a Sunday morning. I know there are many boxed mixes to choose from but there’s nothing like home made right?
There are many things to add to this for flavor choices…
1 1/4 cups unbleached all purpose flour
3 tsp. baking powder
2 Tbl. brown sugar (you can use white if you prefer)
1/2 tsp. salt
1 beaten egg
1 cup milk
2 Tbl. oil (or maple syrup; the secret ingredient)
a splash of vanilla
Add all the dry ingredients together in medium mixing bowl. Add the egg, oil/maple syrup, vanilla, and milk and stir with wooden spoon. You want the batter to be a little lumpy so don’t over mix. Here’s where the flavor additions come in…
Feel free to add to taste, things like:
mini chocolate chips
peanut butter chips or regular peanut butter
canned pumpkin pie filling
apple pie filling
Really anything you think of that goes great with pancakes could be added, the sky is the limit!
Stir all this together. Heat an electric griddle or skillet and spray with cooking spray. I use a 1/3 cup measure and scoop some batter and pour it into the hot pan. Cook until you see small bubbles forming on top of the pancakes. Flip over and cook for just a bit, it doesn’t seem to take as long on the other side. Cook until golden. Remove from pan and place on a platter. Repeat process until all your batter is used up. These freeze very well. Spread on some butter and syrup and maybe top with some powdered sugar. Yummy!
