Well I’d like to share a little story with you before the recipe if that would be okay? It is why I’m giving you this particular recipe which isn’t technically a recipe but more of a new twist on a very simple summer favorite…
When my brother and I were kids, my Dad always planted a garden. He wanted us to have the experience of tending our own plants. So he went about the task of fencing off two smaller sections of the garden for my brother and I to call our own. Planting things like tomatoes, radishes, cucumbers, onions and alike, gave us a scene of being a mini-farmer.
My favorite though was the tomatoes. I guess I liked their brightly colored flesh when they were ripe. My Dad gave me a taste for tomato sandwiches then and I still love them today.
I just today, had my first tomato sandwich of the year! I experiment with old favorites to try and put a new twist on them. Next time you have the famed “BLT”, try adding some of these toppings…
avocado
boiled egg slices
onion
green olive slices
sliced cheese
Then try something different for the dressing. Instead of traditional mayo, choose…
Ranch dressing
Sour cream
Premixed dressings for potato or macaroni salads
garden vegetable cream cheese
Putting a new twist can bring back some great memories and begin some new ones! Hope you enjoy these suggestions on the old fave!
P.S. If your wondering about the extra “B” in the title… I’ve named this the “Beyond Bacon Lettuce & Tomato Sandwich” Let me know how you like it! .
This is Me
Hi, I’m Cyndi! I am a wife to a wonderful God-fearing man for almost twenty years. I am a mom to an ambitious comedic eighteen-year-old son and a spirited fun-loving sixteen-year-old daughter. I love to cook, create anything I can think of to make, talk and visit with friends and even strangers, and of course I love to write. Along with the writing, I love to read what other people write as well. I would love to live in the south somewhere but for now I live more in the suburbs of a town in Michigan. Oh yeah… and I’m almost blind. This means that I have to do things a little differently. It takes a little more time and a little more patience to get things done, but they get done. I was told of my eye disease when I was nine years old. At forty-four, they still cannot diagnose what I have for certain. However, I won’t sit still while they try and figure it out. Each day brings different challenges and some of the same as well. Navigating new territory is the most difficult thing for me to do, but I refuse to be held back and take the chance on missing out on an exciting new adventure. My bucket list holds adventures like parasailing, visiting Ireland, having at least one book published, and I’m sure there are more that I haven’t listed yet. Painting word pictures is my therapy and sanctuary. I use life as my brushes and paint. Lite me a candle, put on the spa music and a-writing I will go. Come on this journey with me, I hope you can find some new colors you like.

We have a few ripening & they are delish!
Love to try some of these ideas!
Thank you for sharing!!
Today we went out for lunch .
Imagine thick sour dough bread , bacon, cheese, arugula & raspberry jam. also jalapeño which I quickly discarded) 🥵 but I would add tomatoes to one if I made it at home!
oooooh! Rene that sounds yummy. I’m not the biggest fan of arugula but it probably added a nice flavor to the sandwich. Grab your hubby, make a couple BBLT’s and sit around the table and enjoy each others company. Blessings.
