Hey Y’all, better late then never I suppose… my apologies for the late send off on the recipe. Life has a tendency to throw little curve balls at us from time to time don’t they?
Well without further ado, here ya go…
Mrs. P’s Chicken
Chicken breasts or tender loins
1 to 2 sleeves buttery crackers such as Ritz or Club
1/2 to 1 cup Parmesan cheese depending on how cheesy you want to make it
1 stick butter or margarine
Preheat oven to 375 degrees. Melt butter or margarine in microwave in large enough microwave safe dish to lay a piece of chicken in, such as a glass pie plate. In another dish, crush crackers and dump them into the dish, add in Parmesan cheese. Mix together. Prepare chicken for cooking by thawing, washing and patting dry. Dredge chicken one piece at a time into butter on both sides. Transfer to cracker/cheese blend and coat on both sides. Lay onto cookie sheet. To make things simpler for clean up, line sheet with parchment paper. Place sheet into oven and bake about 30 minutes. This is great comfort food and goes well with corn on the cob and potatoes.
